So I grow a wide range of varieties 00:02:44.409 --> 00:02:48.129 of them. And my peony harvest stretches about 00:02:48.129 --> 00:02:50.409 two weeks because I have early bloomers, late 00:02:50.409 --> 00:02:55.030 bloomers. And because of this, I can predictably 00:02:55.030 --> 00:02:58.530 know that I'm not going to plan on my own peonies 00:02:58.530 --> 00:03:01.659 for that first wedding of the year. May 30th 00:03:01.659 --> 00:03:04.199 or whatever. It'd be great if I have some because 00:03:04.199 --> 00:03:07.340 they'd be really useful. But the three, four 00:03:07.340 --> 00:03:09.939 weekends after that, I will definitely plan on 00:03:09.939 --> 00:03:13.219 using peonies and dry packing them in the cooler. 00:03:13.539 --> 00:03:16.620 And the thing is, peonies are not just flowers. 00:03:16.780 --> 00:03:19.020 They're labor, they're cooler space, they're 00:03:19.020 --> 00:03:21.400 cashflow, they're customer expectations. And then one is my new one 00:03:33.379 --> 00:03:36.199 in my new space. And that is dedicated to tulips 00:03:36.199 --> 00:03:38.659 and peonies. I use the old one for, and then 00:03:38.659 --> 00:03:41.280 the new one is the one that we're using for our 00:03:41.280 --> 00:03:44.159 regular fresh florals. Even before we talk about 00:03:44.159 --> 00:03:48.060 sales, the main thing that I start planning on 00:03:48.060 --> 00:03:50.259 for the year is crop planning. And it really 00:03:50.259 --> 00:03:53.240 just affects all of those decisions. So something 00:03:53.240 --> 00:03:57.090 that often gets lost in conversations. is about 00:03:57.090 --> 00:03:59.889 the planning. And when you're just starting as 00:03:59.889 --> 00:04:02.849 a new flower farmer, crop planning might not 00:04:02.849 --> 00:04:06.530 be that critical. So if your business model is 00:04:06.530 --> 00:04:10.240 simple, like a you pick. a farm stand, casual 00:04:10.240 --> 00:04:13.000 market sales. You can keep things simple. You 00:04:13.000 --> 00:04:16.259 can go by your last frost date. You can direct 00:04:16.259 --> 00:04:19.220 sow those heat loving annuals, the sunflowers, 00:04:19.220 --> 00:04:22.680 the zinnias, the cosmos, and sell what you have 00:04:22.680 --> 00:04:25.120 when it's blooming. You can pretty well predict 00:04:25.120 --> 00:04:29.149 your subscriptions around. that frost date of 00:04:29.149 --> 00:04:31.589 those heat loving annuals. And that keeps it 00:04:31.589 --> 00:04:33.810 pretty straightforward. And that's what I did 00:04:33.810 --> 00:04:36.990 for a long time until I started booking things 00:04:36.990 --> 00:04:40.009 that were not in alignment with those heat loving 00:04:40.009 --> 00:04:42.750 annuals and deciding that I wanted to learn how 00:04:42.750 --> 00:04:45.709 to serve those customers, enter high tunnels 00:04:45.709 --> 00:04:48.550 with or without a heater and really extending 00:04:48.550 --> 00:04:51.730 my season and planning for it. In the early years, 00:04:51.790 --> 00:04:55.500 you can have that simplicity and That is just 00:04:55.500 --> 00:04:57.560 as important to have that strategy in the very 00:04:57.560 --> 00:05:00.480 beginning. But once you move into crops like 00:05:00.480 --> 00:05:03.779 lisianthus and ranunculus and tulips and dahlias 00:05:03.779 --> 00:05:07.040 and snapdragons and bupleurum that are one and 00:05:07.040 --> 00:05:09.500 done and you have to have a plan for when they're 00:05:09.500 --> 00:05:12.879 blooming, these crops require planning because 00:05:12.879 --> 00:05:15.829 they are slow. They are expensive and they are 00:05:15.829 --> 00:05:18.689 timing dependent. At its core, crop planting 00:05:18.689 --> 00:05:21.889 means two things. When will this crop bloom and 00:05:21.889 --> 00:05:24.110 how will I sell it when it does? And so that 00:05:24.110 --> 00:05:26.250 includes a lot of succession planting. You know, 00:05:26.269 --> 00:05:29.209 you can sit there and grow 200 sunflowers every 00:05:29.209 --> 00:05:31.449 10 days so that you always have that focal flower. 00:05:31.790 --> 00:05:35.449 Or for me, I just grow about a thousand of them 00:05:35.449 --> 00:05:39.449 to be blooming first week of August. And I'm not replanting 00:05:54.019 --> 00:05:55.439 them all the time because they're not a flower 00:05:55.439 --> 00:05:58.279 that I can use for weddings. They're not a flower 00:05:58.279 --> 00:06:01.680 that is desired for that type of work. So they're 00:06:01.680 --> 00:06:04.220 just, they're not useful to me other times of 00:06:04.220 --> 00:06:07.959 the year. But like it or not, flowers like snapdragons 00:06:07.959 --> 00:06:10.439 and lisianthus, they're succession planted. I would say give or take 00:06:41.420 --> 00:06:44.860 two week window, depending on sun and conditions. 00:06:44.980 --> 00:06:47.819 And then you have your harvest window. And that 00:06:47.819 --> 00:06:51.319 experience will come from trial and error, learning 00:06:51.319 --> 00:06:54.819 from other growers and Googling the days to maturity 00:06:54.819 --> 00:06:57.939 and track what actually happens on your farm 00:06:57.939 --> 00:07:00.300 in your zone. And crop planning isn't about predicting 00:07:00.300 --> 00:07:04.060 the future. It's about narrowing the window so 00:07:04.060 --> 00:07:06.699 that you're not guessing. Rehearsal dinners before 00:07:31.550 --> 00:07:33.649 the wedding, sometimes they're picking a totally 00:07:33.649 --> 00:07:35.930 different color palette than they're having for 00:07:35.930 --> 00:07:37.769 the wedding the next day. Sometimes they're using 00:07:37.769 --> 00:07:39.470 the same flowers that they're using for their 00:07:39.470 --> 00:07:41.430 wedding and just getting more of them or upgrading, 00:07:41.769 --> 00:07:44.129 reusing them two days in a row, a lot of different 00:07:44.129 --> 00:07:46.449 options. But then those weddings, of course, 00:07:46.490 --> 00:07:48.970 I know that I need those specific colors those 00:07:48.970 --> 00:07:51.709 specific weeks. So if I know that I have an all 00:07:51.709 --> 00:07:54.490 white wedding in August. I need white flowers 00:07:54.490 --> 00:07:57.829 blooming in August. And that means planting them 00:07:57.829 --> 00:08:01.250 at specific times for that specific plant, entering 00:08:01.250 --> 00:08:03.149 it into the crop planner and looking at when 00:08:03.149 --> 00:08:04.910 they're supposed to be blooming. And then that'll 00:08:04.910 --> 00:08:07.110 tell me. So that was about 50 % of the flowers 00:08:07.110 --> 00:08:09.610 that we grow. And then about 20 % of what we 00:08:09.610 --> 00:08:13.310 grow is for other florists. So again, those same 00:08:13.310 --> 00:08:16.310 florists need specific colors at specific times. 00:08:16.329 --> 00:08:19.129 And that requires planning on both sides. And 00:08:19.129 --> 00:08:22.220 then the remaining. 30 % of what we grow.
